WHAT IS TANDOORI?
Tandoori food preparation takes its name from the word "Tandoor" an oven made from Indian clay about 4 feet deep with a diameter of 2 feet at the center, narrowing to about 1 foot at the top. It is used particularly for baking bread, roasting lamb, beef, chicken, lobster or shrimp. The process seals in the flavor of the meat conserving the characteristically spicy taste which comes from a 24-hour marinade. The marinade concicts of homemade yogurt, freshly ground Masala (spices) and fresh lemon juice. The Masala used is Garam Masala which is a mixture of spices that is found in every Induan Curry and concicts of cumin, coriander, cloves, cardamom, cinnamon, nutmeg, star anise, black peppercorns and mace. It is important to remember that all of the Tandoori dishes are relatively dry and are not in a gravy or sauce.

WHAT IS BIRYANI?
Biryani is a set of rice-based foods made with fresh Masal (spices), basmati rice and meat, fish or vegetables. Biryani is mostly famous among the people of Pakistan, India and Bangladesh. The spices and condiments used in a typical Biryani include ghee (clarified butter), peas, cumin, coriander, cloves, cardamon, cinnamon, bay leaves, saffron, ginger and garlic. Biryani was introduced to the Indian sub-continent by Muslim travelers and merchants. Local variations of this dish are not only admired in South Asia but also in Arabia and within South Asian communities in Western Countries. Biryanis are similar to Chinese fried rice..
