WHAT IS TANDOORI?
Tandoori food preparation takes its name from the word "Tandoor" an oven made from Indian clay about 4 feet deep with a diameter of 2 feet at the center, narrowing to about 1 foot at the top. It is used particularly for baking bread, roasting lamb, beef, chicken, lobster or shrimp. The process seals in the flavor of the meat conserving the characteristically spicy taste which comes from a 24-hour marinade.
